Ingredients
    Noodles:
  • 200 g naengmyeon noodles (buckwheat or sweet potato starch noodles)
  • Broth
  • 4 cups cold beef broth (homemade or store-bought)
  • 1 cup dongchimi (radish water kimchi)
  • 1 tbsp soy sauce
  • 1 tbsp sugar
  • 1 tbsp rice vinegar
  • 1 tsp salt
  • Toppings
  • 100 g sliced beef (brisket or flank steak)
  • 1/2 cucumber julienned
  • 1 Korean pear (or regular pear)
  • 1 hard-boiled egg, halved
  • Kimchi (optional)
  • Sesame seeds
  • Sauce
  • 2 tbsp gochujang (Korean red chili paste)
  • 1 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp sugar
  • 1 tsp sesame oil
  • 1 clove garlic, minced
Instructions
  1. Prepare the Broth
      • In a large bowl, combine the cold beef broth and dongchimi broth (if using).
      • Add soy sauce, sugar, rice vinegar, and salt to the broth mixture. Adjust seasoning to taste. Refrigerate until ready to use.
  2. Cook the Noodles
    • Boil a pot of water and cook the naengmyeon noodles according to the package instructions (usually 3-4 minutes).
    • Drain the noodles and rinse under cold water to stop the cooking process. Drain well and set aside.
  3. Prepare the Sauce
      • In a small bowl, mix together gochujang, soy sauce, rice vinegar, sugar, sesame oil, and minced garlic. Stir until well combined. Set aside.
  4. Prepare the Toppings
    • Cook the sliced beef in boiling water until tender (about 5-7 minutes). Drain and set aside.
    • Julienne the cucumber and slice the pear thinly.
    • Hard-boil an egg, then peel and halve it
  5. Assemble the Naengmyeon
      • Divide the cold noodles into two serving bowls.
      • Pour the cold broth mixture over the noodles.
      • Top each bowl with sliced beef, julienned cucumber, sliced pear, kimchi (if using), and half of a hard-boiled egg.
      • Drizzle the prepared sauce over the top and sprinkle with sesame seeds.
  6. Serve

    Serve immediately, ensuring the broth is cold and the noodles are well-chilled.
